Savory turkey taco meat on lime-zested brown rice, topped with sweet corn, fresh pico de gallo, and optional mozzarella cheese—perfect for meal prepping four flavorful lunches.

Ingredients

Scale
  • 3/4 cup brown rice (uncooked; can substitute quinoa or long grain white rice)
  • 1/8 teaspoon salt (for rice cooking)
  • Zest of 1 lime
  • 3/4 lb lean ground turkey (can swap with ground beef, chicken, or tofu)
  • 2 tablespoons homemade taco seasoning
  • 2/3 cup water
  • 1 pint cherry tomatoes, halved
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 1/4 cup red onion, finely chopped
  • Juice of 1/2 lime
  • 1/8 teaspoon salt (for pico de gallo)
  • 12 oz can corn kernels, drained
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Cook brown rice according to package directions with 2 parts water to 1 part rice, adding lime zest and 1/8 tsp salt to the cooking water; let rice cool slightly.
  2. Heat a skillet over medium heat and add ground turkey. Break up with a spatula and cook until no pink remains, about 8–10 minutes.
  3. Sprinkle taco seasoning over cooked turkey, pour in 2/3 cup water, stir, and simmer 2–3 minutes until sauce thickens and coats meat; remove from heat and let cool slightly.
  4. In a bowl, combine halved cherry tomatoes, finely chopped jalapeño, finely chopped red onion, lime juice, and 1/8 tsp salt; toss to make pico de gallo.
  5. Drain canned corn well and pat dry if needed.
  6. Divide cooled rice evenly among four 2-cup meal prep containers.
  7. Top each portion of rice with seasoned turkey, then corn, pico de gallo, and sprinkle with shredded mozzarella cheese if using.
  8. Allow assembled containers to cool completely before sealing for storage.

Notes

Allow ingredients to cool before sealing containers to prevent condensation and soggy rice., Store pico de gallo separately if reheating to maintain freshness and prevent sogginess., Pat canned corn dry to reduce moisture in meal prep bowls., Use lime zest in rice cooking water instead of lime juice to keep rice fluffy., Use good-quality taco seasoning, adding gradually to taste., Use BPA-free airtight meal prep containers and store containers in a single layer in the fridge for best results., Add chopped jalapeño or hot sauce before eating for extra spice if desired.
