A hearty and protein-packed bowl featuring roasted sweet potatoes, taco-seasoned ground beef, creamy cottage cheese, sliced avocado, and a drizzle of spicy-sweet hot honey.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp neutral oil (such as avocado or grapeseed oil)
  • 1/2 tsp cinnamon (optional)
  • Salt and freshly ground black pepper to taste
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 tbsp tomato paste
  • 2 cups cottage cheese
  • 2 avocados, cubed or sliced
  • 4 tbsp hot honey (or to taste)
  • 1 cup honey (for hot honey drizzle)
  • 1 tbsp crushed red pepper flakes (for hot honey)
  • 1 tsp apple cider vinegar (for hot honey)

Instructions

  1. Preheat air fryer to 400°F (or preheat oven if roasting).
  2. Peel and cube sweet potatoes into even pieces.
  3. Toss sweet potato cubes with neutral oil, salt, pepper, and optional cinnamon.
  4. Spread sweet potatoes in a single layer and air fry at 400°F for 10–15 minutes, shaking once, until golden and tender (or roast in oven/pan-fry in a skillet until crisp and cooked through).
  5. While the sweet potatoes cook, heat a large skillet over medium-high heat, add ground beef, and break into small pieces; brown the beef.
  6. Stir in tomato paste and cook to caramelize slightly.
  7. Sprinkle taco seasoning over the beef, stir until evenly coated and beef is fully cooked; drain excess grease if needed and set aside.
  8. Combine honey, crushed red pepper flakes, and apple cider vinegar in a small saucepan.
  9. Gently warm the honey mixture over low heat for 2–3 minutes, letting it bubble and reduce slightly while stirring occasionally.
  10. Remove the pan from heat, steep for 5–10 minutes, then strain out the pepper flakes and let the hot honey cool slightly.
  11. Slice or cube avocados just before serving (toss with lime juice if prepping ahead).
  12. Season cottage cheese with a pinch of salt and plenty of freshly cracked black pepper.
  13. Divide roasted sweet potatoes and seasoned beef among bowls.
  14. Top each bowl with a generous scoop of seasoned cottage cheese and avocado.
  15. Drizzle hot honey over each bowl and serve.

Notes

For best results, cut sweet potatoes into evenly sized cubes and cook in a single layer to ensure crispiness., Use a neutral oil with a high smoke point for roasting or air frying sweet potatoes., Let beef brown properly and caramelize tomato paste for richer flavor., Season cottage cheese well with salt and pepper to enhance flavor., Add hot honey drizzle just before serving to maintain texture and brightness., If prepping ahead, keep components separate to preserve freshness and assemble just before eating., Customize by swapping proteins (turkey, chicken, pork, tofu, tempeh) or cheeses (Greek yogurt, ricotta, feta)., Try alternative sauces like sriracha-honey, spicy chili oil, or gochujang-honey blend for variation., Add extras like black beans, roasted corn, pickled onions, radishes, or fresh greens for added flavor and texture.
