Juicy pork and ginger meatballs coated in a homemade teriyaki glaze, served with jasmine rice and steamed broccoli in easy, budget-friendly bowls.

Ingredients

Scale
  • 1 lb. ground pork
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp soy sauce
  • 2 green onions, sliced (divided)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 2 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 cup water (divided)
  • 2 Tbsp cornstarch
  • 1 cup jasmine rice
  • 2 cups water (for rice)
  • 1 Tbsp sesame seeds
  • 1 lb. frozen broccoli florets

Instructions

  1. Preheat the oven to 400ºF.
  2. In a bowl, combine ground pork, egg, breadcrumbs, minced garlic, grated ginger, soy sauce, and sliced green onions; mix gently until just combined.
  3. Form mixture into 16 evenly sized ping-pong ball meatballs and place on a parchment-lined baking sheet.
  4. Bake meatballs at 400ºF for about 20 minutes until golden and internal temperature reaches 160ºF.
  5. While meatballs bake, cook jasmine rice: combine rice and water in a saucepan, bring to boil, reduce heat and simmer covered for 15 minutes; turn off heat and let rest for 5 minutes, then fluff with a fork.
  6. Whisk soy sauce, brown sugar, minced garlic, grated ginger, 1 cup water, and cornstarch in a saucepan until cornstarch dissolves.
  7. Cook sauce over medium heat, stirring, until it simmers and thickens to a glossy glaze; remove from heat.
  8. Cook frozen broccoli according to package instructions or microwave if serving immediately; for meal prepping, place frozen broccoli in containers to steam when reheated.
  9. Transfer baked meatballs to teriyaki sauce and stir to coat evenly.
  10. Divide rice and broccoli among four bowls, add four meatballs each, spoon over extra sauce, and top with sliced green onions and sesame seeds.

Notes

Mix meatball ingredients gently to keep meatballs tender and avoid density., Shape meatballs uniformly (ping-pong ball size) for even cooking., Use parchment or oil on baking sheet to prevent sticking and simplify cleanup., Dissolve cornstarch in cold water fully before heating to avoid grainy sauce., Save some sauce aside for drizzling at serving to add shine and extra flavor., For meal prep, frozen broccoli will steam upon reheating when added directly to containers., Reheat meatballs in microwave or 350ºF oven for best texture; bake longer if reheating from frozen., Use low-sodium soy sauce to reduce salt, and adjust sweetness or saltiness by adding water or rice vinegar., For gluten-free version, use gluten-free breadcrumbs or omit breadcrumbs with extra egg; substitute soy sauce with tamari or gluten-free soy sauce.
