Fluffy, moist pumpkin spice pancakes made with cottage cheese, gluten-free flour, and warm fall spices. Protein-packed, kid-friendly, and freezer-friendly breakfast treat.

Ingredients

Scale
  • 4 eggs (no flax egg substitutions recommended)
  • 1 cup cottage cheese (preferably organic plain)
  • ½ cup pumpkin puree
  • 3 tablespoons pure maple syrup, plus more for serving
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose flour or regular all-purpose flour (or 1 cup rolled oats if blending for a heartier bite)
  • ½ tablespoon baking powder
  • ½ teaspoon cinnamon (can substitute with 1 teaspoon pumpkin pie spice)
  • Any desired mix-ins such as chocolate chips, fresh blueberries, diced apples, or raisins

Instructions

  1. In a large bowl or blender, combine eggs, pumpkin puree, cottage cheese, maple syrup, and vanilla extract; blend or whisk until smooth.
  2. Stir in flour, cinnamon, and baking powder until just combined — do not overmix.
  3. Gently fold in any desired mix-ins.
  4. Heat a large skillet over medium-low heat and add butter or oil to coat the pan.
  5. Spoon or pour about ¼ cup batter per pancake into the skillet, spacing pancakes about 2 inches apart.
  6. Cook until bubbles form on the surface and edges look set, about 3–5 minutes.
  7. Flip pancakes and cook until golden and cooked through, about 3–5 minutes more.
  8. Remove pancakes from skillet and serve warm with extra maple syrup and preferred toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months., You can freeze pancakes or freeze individual batter portions in ice cube trays for quick cooking later., If preparing for babies or toddlers, omit maple syrup from the batter and serve syrup on the side or with mashed fruit., For a super smooth batter, use a blender; mixing by hand retains cottage cheese texture., Use butter or oil to prevent sticking and cook pancakes on medium-low heat., Regular all-purpose flour can replace gluten-free flour if gluten restriction is not required.
