Delicious, thick, and fluffy protein-packed pancakes made with Greek yogurt, perfect for a healthy and filling breakfast.

Ingredients

Scale
  • 2 Tablespoons coconut oil (melted and cooled)
  • 3 large eggs
  • 1 cup whole milk vanilla Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 Tablespoon maple syrup (plus extra for serving)
  • 1 1/4 cup all-purpose flour (or swap half for whole wheat)
  • 2 teaspoons baking powder

Instructions

  1. Melt the coconut oil and set aside to cool.
  2. Whisk the eggs and Greek yogurt together in a large bowl until smooth.
  3. Stir in the vanilla extract, cooled melted coconut oil, and maple syrup until well combined.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Slowly add the dry ingredients to the wet ingredients and gently fold until just combined; the batter should still have some lumps.
  6. If the batter is too thick, stir in 1–2 tablespoons of milk to loosen.
  7. Optionally, fold in about 1/2 cup of mini chocolate chips or fresh/frozen blueberries before cooking.
  8. Preheat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.
  9. Pour about 1/4 cup of batter per pancake onto the skillet.
  10. Cook pancakes for 2–3 minutes until bubbles form and edges look set, then flip and cook for another 2–3 minutes until golden brown.
  11. Let the pancakes cool slightly before serving with desired toppings.

Notes

Avoid over-mixing; leaving some lumps in the batter helps keep pancakes fluffy rather than tough., Use a griddle or large pan to cook multiple pancakes at once and save time., Add 1–2 tablespoons of milk if you prefer thinner pancakes., These pancakes freeze well; cool completely before storing in freezer bags for up to 3 months., Reheat refrigerated pancakes in the microwave with a splash of water or on the stovetop/toaster for crispy edges., Use gluten-free flour blend to make the recipe gluten-free, or substitute half/all flour with whole wheat to increase fiber.
