  • 1 medium onion, thinly sliced
  • 5 boneless, skinless chicken thighs (about 1–1.25 lb)
  • Salt and black pepper, to taste
  • 1/3 cup lower-carb BBQ sauce
  • 1/2 cup shredded cheese

  4. Season chicken thighs with salt and pepper.
  5. Add chicken thighs to the skillet with the onions, cover, and cook over medium-low heat for 2–3 minutes.

  7. Shred the chicken in the pan with two forks.
  8. Stir in 1/3 cup lower-carb BBQ sauce until evenly coated.
  9. Sprinkle 1/2 cup shredded cheese over the chicken, cover, and let the cheese melt for 1–2 minutes.

Notes

Slice onions really thin for best texture and flavor. Cook them slowly until nicely browned., Add mushrooms like white or portobello with the onions for earthiness and volume., Let chicken brown in the skillet for richer flavor and juicier meat., Choose a lower sugar BBQ sauce or make your own to manage carbs., Cheese adds a creamy, melty boost if desired., For variations, swap chicken thighs for breasts (watch cooking time and moistness), try different cheeses (pepper jack, smoked gouda), or grill the chicken., Serve as a low-carb bowl over sautéed peppers and onions or as a sandwich on buns for more carbs., Store leftovers separately from sautéed vegetables to preserve texture, refrigerate for 3-4 days or freeze for 2-3 months., Reheat gently on the stovetop or microwave.
