Ingredients

Scale
  • 2 cups rolled oats (quick or old-fashioned)
  • 1 cup egg whites
  • ¼ cup chia seeds (or flaxseeds)
  • ¼ cup hemp seeds (hulled hemp hearts)
  • 1.5 cups pure pumpkin puree (not pumpkin pie filling)
  • 1 cup milk (dairy or plant-based)
  • ¼ cup coconut sugar (or brown sugar)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ cup chocolate chips (optional)
  • ½ teaspoon salt
  • 1.5 cups plain non-fat Greek yogurt (mixed into the oat mixture)
  • 1.5 cups plain non-fat Greek yogurt (for topping)
  • ¼ cup chopped pecans or walnuts (optional, for topping)

Instructions

  2. In the prepared baking dish, combine rolled oats, egg whites, Greek yogurt (1.5 cups), chia seeds, hemp seeds, pumpkin puree, milk, coconut sugar, vanilla extract, cinnamon, and salt; mix until well combined.
  3. Sprinkle chocolate chips on top and gently press them into the batter.
  4. If using, sprinkle chopped nuts on top before baking.
  5. Bake for 30–35 minutes at 350°F, starting to check around 25 minutes, until the liquid is mostly absorbed and the center is slightly moist.
  6. Let cool for about 5 minutes.
  7. Cut into 6 slices and serve, topping with the remaining Greek yogurt and optional maple syrup or nuts if desired.

Notes

Avoid instant oats as they become too mushy; quick or old-fashioned rolled oats provide the best texture., Greasing the pan thoroughly prevents sticking and caramelization on edges., The baked oatmeal should have a moist, tender center, not dry or cakey., For a vegan version, replace egg whites with flax or chia eggs and use plant-based milk and yogurt; protein content will decrease., Sugar can be adjusted or substituted with maple syrup, brown sugar, or sugar alternatives as preferred.
