  • 8 ounces dry chickpea pasta
  • 8 cups broccoli florets
  • 2 lbs chicken tenders (about 20 ounces cooked)
  • Sprinkle of salt
  • Sprinkle of pepper
  • Butter or Italian seasoning
  • 7 ounces alfredo sauce (jarred such as Rao’s or homemade)
  • 1 cup shredded low-moisture mozzarella cheese

Instructions

  1. Bring a large pot of salted water to a boil and cook chickpea pasta until al dente according to package directions; reserve a little pasta water and then drain.
  2. Season chicken tenders with butter or Italian seasoning, salt, and pepper.
  3. Air fry chicken at 400°F for 15 minutes, flipping halfway through, or cook by preferred method until internal temperature reaches 165°F; chop into bite-sized pieces.
  4. Cut broccoli into small florets and steam (microwave) or roast until just tender.
  5. If desired, simmer jarred alfredo sauce briefly to reduce and thicken.
  6. In a large bowl, combine cooked pasta, chopped chicken, steamed broccoli, and alfredo sauce; stir to evenly coat, adding reserved pasta water if mixture feels dry.
  7. Transfer mixture to a 9×11 inch casserole dish and evenly sprinkle shredded mozzarella on top.
  8. Bake casserole at 400°F for about 20 minutes until cheese is melted, bubbly, golden, and the casserole is heated through (internal temperature 165°F).

Notes

Cook pasta al dente to avoid mushiness after baking., Salt pasta water well for best seasoning throughout the dish., Use low-moisture mozzarella or dry shredded cheese with a paper towel to prevent excess moisture and a watery casserole., Simmering jarred alfredo sauce briefly can help thicken it if desired., Air frying chicken at 400°F for 15 minutes works well but other cooking methods can be used as long as internal temperature reaches 165°F., For meal prep, assemble portions in oven-safe containers and bake chilled or freeze before baking, then reheat when needed., Seasonings such as garlic powder, Italian herbs, or red pepper flakes on chicken can be added for extra flavor., Swaps: any high-protein pasta brand or shape can be used; cooked or rotisserie chicken may replace tenders; other vegetables like cauliflower can be substituted for broccoli; homemade alfredo sauce and dairy-free versions may be used but will change nutrition and texture., Store casserole fully cooled in airtight container up to five days in fridge; freeze before baking for longer storage; reheat in microwave or oven.
