A flavorful and hearty breakfast burrito loaded with scrambled eggs, breakfast sausage, cheese, black beans, and poblano peppers, wrapped in a warm tortilla. High in protein and fiber, perfect for meal prep and busy mornings.

Ingredients

Scale
  • 1/2 lb ground breakfast sausage
  • 1 poblano pepper, seeded and diced
  • 12 large eggs, whisked
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 ounces cream cheese, cubed (optional)
  • 6 large tortillas (such as Siete grain free tortillas)
  • 6–8 ounces shredded cheddar cheese
  • 1 (15-ounce) can black beans, drained and rinsed
  • To serve: green onions, cilantro, pico de gallo, or avocado

Instructions

  1. Preheat oven to 425°F if planning to bake the burritos immediately.
  2. Warm a large skillet over medium-high heat.
  3. Add ground breakfast sausage and cook, breaking it up, until browned and no longer pink.
  4. Transfer cooked sausage to a paper towel-lined plate to drain, leaving a little fat in the pan.
  5. Lower heat to medium and add diced poblano peppers; cook 2–3 minutes until soft and fragrant.
  6. Whisk eggs with kosher salt and black pepper.
  7. Reduce heat to medium-low and pour whisked eggs into skillet; cook gently for 1–2 minutes, letting edges set and pulling them to allow uncooked egg to flow underneath.
  8. Add cubed cream cheese and stir until melted and eggs become soft and creamy; remove from heat.
  9. Warm tortillas about 20 seconds in the microwave or briefly char over a gas flame until soft and flexible.
  10. On each tortilla, layer shredded cheese first, then black beans, scrambled egg mixture, and cooked sausage.
  11. Fold tortilla over filling, tuck in the sides, and roll tightly to seal.
  12. For immediate serving: wrap each burrito in foil and bake at 425°F for 8–10 minutes until heated through and cheese is melted.
  13. To freeze: cool burritos completely, wrap individually in foil, place in a freezer-safe bag, and freeze.
  14. To reheat frozen burritos: bake wrapped at 425°F for 20 minutes from frozen or microwave unwrapped for 1–2 minutes until hot.

Notes

Avoid adding watery ingredients like salsa, guacamole, fresh lettuce, or raw tomato before freezing to prevent soggy burritos; add fresh toppings just before serving., Sausage can be substituted with turkey or chicken for a leaner protein., Cheese options can be varied (Mexican blend, Monterey Jack, Pepper Jack) or omitted for a dairy-free version., Additional veggies such as diced bell peppers, caramelized onions, mushrooms, broccoli, or squash can be added for more nutrition and flavor., Cheese helps protect tortillas from getting soggy and promotes good texture upon reheating.
