A warm and comforting lasagna soup that combines classic lasagna flavors like tomato, meat, and three cheeses into a one-pot meal, eliminating the fuss of layering noodles and baking.

Ingredients

Scale
  • 1–2 tablespoons Olive Oil or preferred cooking oil
  • 1 pound Ground Beef
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 1 (15-ounce) can Diced Tomatoes with juice
  • 1 (15-ounce) can Tomato Sauce or tomato puree
  • ⅓ cup Tomato Paste (about half a 6-ounce can)
  • 4 cups Chicken Broth
  • 1–2 cups Water (to thin or thicken as needed)
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Salt (adjust to taste)
  • Black Pepper (to taste)
  • 8 ounces Bowtie Pasta (uncooked) or similar sturdy pasta shape
  • ½ cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese, shredded (about ½ cup)
  • ¼ cup Parmesan Cheese, shredded, shaved, or freshly grated
  • ¼ cup Fresh Parsley, chopped

Instructions

  1. Heat a large pot over medium-high heat and warm 1–2 tablespoons olive oil until shimmering.
  2. Add 1 pound ground beef, 1 diced large onion, and 4 minced garlic cloves; cook, stirring often, until the beef is browned and onions are soft; drain excess fat if needed.
  3. Stir in 1 (15-ounce) can diced tomatoes with juice, 1 (15-ounce) can tomato sauce, ⅓ cup tomato paste, 4 cups chicken broth, 1 tablespoon Italian seasoning, 1 teaspoon salt, and black pepper to taste.
  4. Add 8 ounces uncooked bowtie pasta to the pot and bring the soup to a boil over high heat.
  5. Lower heat to a gentle simmer, cover loosely, and cook 10–15 minutes, stirring often, until pasta is al dente.
  6. Slowly add water or additional broth as needed while the pasta cooks to reach desired soup thickness.
  7. Remove pot from heat and, once it cools slightly, stir in ricotta, shredded mozzarella, and Parmesan cheeses until combined.

Notes

Hardy pasta shapes like bowtie, penne, rigatoni, or macaroni hold their texture best when reheated., Ricotta, mozzarella, and Parmesan can be mixed into the soup for creaminess or served on the side for personalization., Add fresh parsley before serving for color and brightness., The soup pairs well with warm crusty bread and a crisp salad., Vegetarian options include swapping ground beef for mushrooms, zucchini, bell peppers, or beans and using vegetable broth instead of chicken broth., For vegan versions, use plant-based ground crumbles and vegan cheeses or nutritional yeast., Use crushed tomatoes for a thicker tomato broth or marinara plus water as a shortcut., Freeze soup without cheese, adding fresh cheese after reheating.
