Ingredients

Scale
  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 3 chipotle chilis in adobo sauce, finely chopped
  • 1 ½ tablespoon adobo sauce
  • 1 ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • 1 ½ pounds chicken breast, cut into strips
  • 1 cup long-grain white rice, rinsed
  • 1 ½ cups water
  • ¼ teaspoon salt, plus more to taste
  • 1 lime, zested, plus 2 tablespoons fresh lime juice
  • ¼ cup chopped cilantro
  • 1 head romaine lettuce, chopped
  • 1 cup tomatoes, diced
  • 1 cup frozen corn, thawed
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ small red onion, chopped
  • Guacamole or diced avocado

Instructions

  1. Cut chicken breasts into strips.
  2. In a large bowl, combine olive oil, lime juice, chopped chipotle chilis, adobo sauce, garlic powder, and salt to make the marinade.
  3. Toss chicken strips in the marinade, cover, and refrigerate for at least 2 hours or overnight.
  4. Rinse the long-grain white rice under cold water until the water runs clear.
  5. Combine rinsed rice, water, and salt in a pot and bring to a boil.
  6. Reduce heat to low, cover, and simmer until water is absorbed and rice is tender (about 15–18 minutes).
  7. Fluff the cooked rice with a fork, then stir in lime zest, lime juice, chopped cilantro, and additional salt to taste.
  8. Rinse and drain the canned black beans and thaw the frozen corn.
  9. Chop romaine, dice tomatoes, chop red onion, and prepare avocado or guacamole.
  10. Heat a large skillet over medium-high heat.
  11. Remove chicken from the marinade and let excess drip off.
  12. Cook the chicken in the hot skillet, stirring, until no longer pink and browned, about 5 minutes; set aside.
  13. Assemble bowls by layering cilantro lime rice and chopped romaine, then top with cooked chicken, tomatoes, avocado or guacamole, corn, black beans, and red onion, and serve immediately.

Notes

Marinate the chicken longer for maximum flavor; up to 24 hours is optimal., Store chicken, rice, and toppings separately for best freshness when meal prepping., Reheat chicken and rice with a splash of water or lime juice to keep moist., Avoid freezing assembled bowls due to fresh toppings; freeze chicken and rice separately., For a vegetarian variation, use extra black beans, seasoned tofu, tempeh, or plant-based crumbles with the same chipotle-lime marinade., Control spiciness by adjusting amount of chipotle chilis and adobo sauce., Swap protein with grilled shrimp or ground beef; substitute rice with brown rice, cauliflower rice, or other grains as desired.
