A creamy, cheesy soup that captures the flavors of a bacon cheeseburger, featuring ground beef, bacon, cauliflower, and sharp cheddar in a light, gluten-free broth.

Ingredients

Scale
  • 1 lb Ground beef
  • 1/2 cup Cooked bacon (crumbled; or raw chopped bacon)
  • 1 head Cauliflower (chopped into florets)
  • 3 1/2 cups Chicken broth, reduced sodium (or beef broth)
  • 1 cup Milk of choice (unsweetened almond milk recommended)
  • 1 tsp Dried parsley
  • 3/4 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 cups Cheddar cheese (shredded)
  • 1/2 cup Heavy cream

Instructions

  1. Cook bacon in a large pot over medium heat until crispy.
  2. Turn heat to medium-high and add ground beef; cook 8–10 minutes, breaking up the meat, until browned; drain excess fat if necessary.
  3. Add chopped cauliflower, chicken broth, milk, dried parsley, sea salt, and black pepper to the pot and bring to a boil.
  4. Reduce heat to medium and simmer 10–15 minutes, until the cauliflower is tender.
  5. Remove pot from heat (or lower to low) and slowly add shredded cheddar and heavy cream in small handfuls, stirring continuously and keeping the heat low until the cheese melts and the soup is smooth.

Notes

Keep bacon grease in the pot for extra flavor and to prevent beef from sticking; drain only if excessive., Add cheese slowly while stirring continuously to avoid clumping., For clump-free cheese, whisk cheese into hot broth separately before adding to soup., Keep heat low when adding cheese to maintain silky texture., To thicken soup, puree some cauliflower with liquid and stir back in or add softened cream cheese., Sauté diced onion, celery, carrots, and garlic in bacon grease before browning beef for more flavor (optional)., Vegetables like broccoli, cabbage, turnips, or rutabaga can be substituted for cauliflower., Soup stores in fridge for 4–5 days and freezes well up to 3 months if almond milk is used., Reheat gently on stove low-medium heat, stirring to reincorporate cheese., For freezer thaw and reheat, whisk or blend to restore texture if needed.
